Get ready for a serious winner of a dinner, my friends.
Chicken Parmesan…healthy edition.
It doesn’t look very healthy, does it? Don’t be fooled by all the cheese.
And holy shmoly, it did not disappoint.
Here is the recipe:
Healthy Chicken Parmesan
- 2 boneless skinless chicken breasts
- 2 egg whites, beaten
- 1/4 cup Italian Bread Crumbs
- 1/2 cup marinara sauce (you know I used Prego)
- 1/8 cup shredded part skim mozzarella cheese
Preheat oven to 350 degrees. Spray a baking dish with cooking spray.
Dip chicken breasts in egg white mixture. Roll the chicken in bread crumbs.
(My chicken was not deformed…I just fanned it out on the bottom so it wouldn’t take a million years to cook.)
Bake for 20-25 minutes or until inside of chicken is no longer pink. Spread chicken with marinara sauce and then top with mozzarella cheese. Put back into the oven and bake for another 5-10 minutes.
I made no substitutions to Jessica’s recipe, except I didn’t measure my mozzarella cheese (and may have added a little extra ;)).
I served my chicken with roasted broccoli (sprinkled with garlic salt) and PC Blue Menu whole wheat linguine (which I don’t like as much as Healthy Harvest, but we needed some noods and it was what I had on-hand).
This dinner was easy, delicious, and nutritious. How I roll!
Tonight’s treadmill run at the gym was actually, dare I say…a good time? I hadn’t been to the gym since Monday, so after work today my body felt like it was actually craaaving a good workout. Weird.
I debated running outside since I noticed on my drive home it was a balmy +3 degrees C, but when I stood outside it was still a bit too chillis, Phyllis. I completed a 3 mile run on the treadmill, followed up with 20 minutes on the elliptical while I caught up on my celebrity gossip.
