He is a character and a half.
Anywhoozles, he lives in Stratford so he doesn’t come into our office very often, but when he does he always brings treats! He sometimes brings this amazing chocolate from a local chocolatier that all the ladies in my office are obsessed with, but he lives on a farm and raises chickens, so he always brings us eggs.
Those babies are fresh! Could have been laid this morning! 😉
I went grocery shopping last night after my run and I just bought eggs, so I had two dozen and I wasn’t sure what I was going to do with them all.
Enter the egg-based frittata. I have never made one before, but I did a bit of googling and figured it looked pretty simple. I didn’t follow a recipe because I had a bunch of stuff in the fridge I wanted to use up, so I kinda just threw in whatever. That is apparently the great thing about frittata’s, you can make them with whatever’s clever!
I prepped all my ingredients, threw them into the frying pan and started cooking. Here is what went into my frittata mix:
- 1 chopped red bell pepper
- 8 chopped asparagus stalks
- 2 handfuls baby spinach
- 1/2 yellow onion, chopped
- 1 clove garlic
- deli ham, chopped (I didn’t measure this, so let’s just say a handful)
I stir fried all the veggies together for a bit, and then added the ham.
In the meantime, I cracked 6 eggs into a large bowl and mixed them together with a whisk. I then stirred about a half cup of cheese into the egg mixture.
When the veggies and ham were done cooking, I poured the egg and cheese over them to cover everything.
I put the entire frying pan in the oven (you can do this with any frying pan apparently, as long as it doesn’t have a rubber handle) and baked it for about 15 minutes at 375 degrees.
It was amazing. Like an omelette, but better, and easier! I don’t know why I’ve never made a frittata before, but let me tell you I will be again. Possibly tomorrow. It was healthy, easy, and quick! My fave. It would also be perfect for breakfast, or brunch.
I went back for a second slice ;). Ando and I also each had a whole wheat dinner roll on the side to round out our meal.
